Moving Day

The time has finally come, moving day! I’ll be so glad to get finished with this moving thing. Packing and more packing, wrapping things and more wrapping things, wiping down things and more wiping down things. When does it ever end? I guess when the last box and the last piece of furniture goes out the door! We have 3 days left before we have to be out of this house. My husband works during the day so we only have the evenings to work on moving the heavy things out so that’s been a little slow. Moving the packed boxes hasn’t really been a big deal at all; just load, and go! We will have it all out by the time our time is up; we only have 1 more load and ta  da! we’ll only have what few personal items like bath items and a few clothes that we have kept back for the weekend. Yea for us! Happy Happy Happy! Smile  So to all of you who plan to move in the near future, pay someone else to do it! JK!  My 2 youngest grandchildren have been here during some of the time of the packing and they have been a BIG help…..they put things in the boxes and they take things out of the boxes…..da da da de de  de..Really, they are both just adorable! Hot smile  We’ll be living in a camper for about 2 weeks until our new home is ready. More to follow……

It’s just not easy packing up everything from over 15 years and trying to live around the chaos of boxes sitting everywhere. I am the type of person that likes to have every thing in it’s place and not thrown around every where, so you can see that this is a little overwhelming for me. Being the person I am, the true southerner that comes out in me, I still need to cook a good supper with tasty fresh vegetables and some cornbread. I left out 1 cast iron skillet, 1 medium size pot, 1 small pot, and a few cooking utensils, the necessary ones. The cast  iron skillet can serve many purposes, frying up some chicken and baking up some good ole cornbread! Yum Yum! Cooking seems to take my mind off of all this packing and for a little while I even forget about all these boxes that surround me! If you’re the type of cook that’s looking for a quick and easy recipe, you’re in luck; I have just the one for you. That is, if you’re looking for a great side dish. This couldn’t be easier. Here goes.       Delicious Stuffed Eggs:    8 fresh eggs    1/3 cup mayonnaise    2 Tablespoons pickle relish    1/2 teaspoon mustard    1/8 teaspoon salt    1/8 teaspoon black pepper    Place eggs in medium size pot, cover with cold water. Place on stove and bring to boil; boil gently for about 8-10 minutes. Turn off heat, cover with lid and let sit for about 10 minutes, remove lid, drain off hot water, pour cold water over eggs until cooled. Crack shells and remove from eggs, rinse off all shell particles from eggs and dry. Slice eggs in half lengthwise. Remove yolk from eggs and place in bowl. After all yolks have been removed, add mayonnaise, mustard, salt, and pepper. Mash yolks and mix thoroughly. Drop or pipe into whites of eggs.
